A DINING DREAM

Itto and his wife, Elyse, dreamed of opening a sushi restaurant and saved for many years to fulfill that dream. In 2014, the couple opened the doors to Itto Sushi in Midvale. Using carefully sourced ingredients and passionately presenting the art-splashed dishes, Itto’s talent as a chef quickly established the eatery’s reputation as more than just a neighborhood sushi spot. 


People outside of the Salt Lake City valley were coming to eat at Itto Sushi. Customers drove from Utah and Davis counties to get a taste of the inventive menu. The couple decided to open a new location in Orem in 2017 then moved into downtown SLC in 2018, bringing the sushi bar and Japanese grill closer to its expanding foodie family.

FRESH & SUSTAINABLE INGREDIENTS

Quality is the cornerstone of Itto Sushi. Chef Itto flies fresh fish and seafood in from Hawaii, Alaska, Japan and Ireland, where the wild catches are always sustainably sourced. Premium-grade rice is carefully seasoned and delicately separated so the grains remain fluffy. Vegetables and other fillings are locally chosen to maximize flavor and freshness.

UNIQUE MENU ITEMS

Itto Sushi boasts an impressive array of Japanese cuisine. From sashimi to yakisoba, the 11-page menu is full of flavorful dishes presented with flair. Sushi selections go beyond the basic California Roll and dining here is always an experience. 


The Firebird Roll—made with tempura shrimp, crab, cream cheese and topped with smoked salmon avocado and a special sauce—is served on fire, literally! Watching the fire burn and hearing the reaction of others in the restaurant is almost as enjoyable as eating this roll. The smokiness carries throughout the fillings for an unforgettable savouriness.


Another fun menu item that gets everyone at your table talking is the Dracula Roll. Like the shape-shifting vampire it’s named after, this mysterious concoction is served in a wooden coffin. Open the lid and wisps of cedar smoke roll out (which are piped in with a culinary gun by Chef Itto to impart a delicate flavor) revealing a sushi roll filled with cucumber, avocado, spicy crab, jalapeño and shrimp tempura. The dish is topped with fresh albacore tuna and crunchy fried onions.


GLUTEN FREE & VEGETARIAN

Itto Sushi also offers several vegetarian and gluten-free menu items. If you see something on the regular menu that doesn’t fit your diet, please ask about possible modifications. It may be as simple as swapping soy sauce for something with less sodium or preparing a roll without a certain ingredient. Each of our three locations is peanut free.
